Thank you all for your input on my tanning bed dilemma!
Truthfully, I see both sides.
-Tanning beds are dangerous, unhealthy things and cause so much trouble than tanned skin is worth..BUT…
- If used seldom, like in my case, I don’t really think it would be doing any serious harm.
So what’s my decision?
I’ve decided not to tan.
BUT only because I just don’t want to spend the money on it. I’ll be the pale girl spending her extra change at the cheesy beach shops! Or maybe I just spent it today when I stopped in at Old Navy. I love the colorful Spring and Summer clothes at Old Navy! I just can’t help myself!
Anyhow.. on to more important things like running and eating healthy…
Or not running…
You see, it never fails that as travel season winds down, I get sick. Travel season is winding down, therefore I am sick. I’m not terribly sick, but under-the-weather just enough to feel that running would set me back instead of making me feeling better. I’ve been drinking water, Emergen-C and tea (shocker!), and sleeping A LOT (but that’s nothing new).
I’ve got a big weekend ahead of me!
ROOMMATE REUNION! In Detroit, too!
We haven’t all been together since my wedding in May of 2008!

I am beyond pumped! Tomorrow night two of my roomies are flying into Pittsburgh, then we’re heading to Michigan on Friday to meet up with the other two! It’s going to be off. the. hook.
This brings me to the “eating healthy” installment of tonight’s blog.
So while I am expecting a fun-filled weekend, my very first marathon is the following Sunday, so I can’t sacrifice healthy foods, hydration, sleep (or my health..thanks, stupid cold)! I’m going to be packing my huge water bottles and some go-to snacks, but I’m also experimenting with a yummy muffin recipe.
Are you ready for this???
VEGAN Oatmeal Blueberry/Apple Muffins
Makes 12 cute little muffins.
1 1/4 c. rolled oats
1 c. whole wheat flour
1 tbsp. baking powder
1 tsp cinnamon
1/2 tsp. salt
1 flax “egg” (1 tbsp. ground flax mixed with 3 tbsp. water)
1 c. orange juice
1/4 c. agave nectar
1/4 c. unsweetened applesauce
1 tsp. vanilla extract
1 cup blueberries or chopped apples
Preheat oven to 400 degree F.
Mix dry ingredients, then add wet ingredients and stir until batter is moistened. Fold in blueberries/apples.
Bake for approximately 18-20 minutes.
Now I have something relatively healthy treat for myself and for my roommates to keep their hands off of my Larabars to share.
But really, they aren’t too sweet and could probably use some more cinnamon or another spice. But I still like them!
And the only reason these are vegan is because I’m dead-set on making a vegan masterpiece that my husband will fall in love with… I am not vegan, I just like a challenge.
And to prove I’m not vegan, I ate the “testers” covered in very real butter. MMM buttah. And a fried egg…with half a green pepper. With OJ and a hot cup of Emergen-C. This cold has stolen my appetite. Weird.
What’s your go-to healthy snack? When I can’t get fresh fruits or veggies, I’m a nuts and dried fruit kinda gal!

I eat fruit like it’s my job. If I’m not eating a meal, I always eat fruit. It’s just how it is hahaha

I quite tanning recently.. after the years of tanning I have done for proms, special occasion and beach prep, I finally decided to stop the fake baking. It is pretty pricey and I just didn’t want to damage my skin anymore, or up the risk of skin cancer. So hopefully I can keep my word on this.
Those muffins look YUM! I am going to have to make a batch.
I was wondering what your view on Splenda is? I am completely addicted, such a bad bad habit, but I just can’t seem to kick it!

I have some serious issues with Splenda. First of all, it’s a highly processed sweetner. And just in keeping with my general food philosphy, I prefer natural to processed, even if it means higher calories!
Occasionally, I don’t think there’s a problem with processed foods. For example, I had a case of diet soda left over from a party, and instead of throwing it out and buying soda, I drank it until it was gone because the only time I drink soda is after really long runs.
The other problem with Splenda is that it has used false advertising to promote its product. I am NOT ok with that! They have actually been sued for their slogan “tastes like sugar because it’s made from sugar”.

I can understand that kicking a habit can be hard, and I’m not going to preach to you! I don’t add sweetners to too much, and when I bake, I use regular cane sugar or agave nectar (it’s sweeter, so you can use less)! I’ve heard that sweetners from the stevia plant are a good substitute (Stevia, Purevia, Truvia), but I have never tried them.
Those are just my opinions on Splenda and sweetners! Hope they help!

I’ve thought about doing some posts on my meals, but I’ll need to put some more thought into it.
I don’t want to get into the habit of logging my food because I think that it can sometimes trigger disordered eating in readers (and maybe even in myself). I really don’t want people looking at what I eat and comparing their diet to mine–everyone has different dietary needs. Plus, I’m NOT a creature of habit, so somedays I eat a lot, and some days I don’t… I just base it off of hunger cues!
However, I promise to post on recipes that I make and maybe at some point I’ll post a day of eats to give my readers a little insight in to the Normally diet!

I’m glad you decided not to tan. I’ve tanned in the past(off and on) and I this winter I decided to never to do it again just because it’s so bad for our skin. We’ll be thankful later in life when our skin healthy looking!
