Lentil and Cauliflower Curry

I like to sweat.

No, really, I do. I think that might be one reason why I loved softball so much! Playing ball in 90 degree weather on dry dirt that sticks to your sweaty legs, arms and face. You feel so hardcore afterwards, but you didn’t feel like you were doing work while you were out there. Sweat is now synonymous with summer and softball. I try to remind myself of that when I go for runs after work in summer—it’s no softball, but it is a favorite pastime. You like to sweat, Abby…

Last night Dave joined me for a 1.5 mile “run”. I say “run” because I was in my FiveFingers and we would only run the hills and walk down them. Regardless of the distance, we still worked up a significant sweat. In fact, it was hot enough that a kind lady, who was amazed at our “hill repeats”, offered us water. We held off of water and food until we were back at our apartment and decided that we wanted to eat.

And apparently we still had water in our bodies to sweat out, so we went with a spicy curry dish that Dave dug up and that we altered based on what we had available.

This is some seriously good stuff. It was kind of a long recipe (extra innings, maybe?), but it was easy, and we were both so pleased with the end result. Plus, it heated up nicely today for a yummy leftover lunch! That’s like winning both games in a double header!

Lentil and Cauliflower Curry

  • 1/2 cup lentils
  • 3/4 small onion, chopped
  • 2 teaspoons curry powder
  • 1/2 teaspoon salt
  • 2 cups water
  • 3 plum tomatoes, chopped and leave out the “innards”
  • 4 cups cauliflower florets
  • 1 jalapeno pepper, halved, seeded and thinly sliced
  • 1 tablespoon  EVOO
  • 2 teaspoons cumin
  • 3 cloves garlic, minced (approx. 3 tsp minced garlic)
  • 2 teaspoons ginger
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons lime juice
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon sugar
  • Combine lentils, onion, curry powder, salt and water in a large pot and cook on low for about 40ish minutes. Stir occasionally. Add cauliflower, tomatoes, and jalapenos and simmer for another 10 minutes.

    Heat cumin, garlic, and ginger in the EVOO until the garlic browns. Add the cayenne pepper. Throw all of that in with the lentil/cauliflower mixture. Stir in lime juice, cilantro, and sugar.

    Serve over jasmine rice.

    Dave and I concur that this meal isn’t just a hit, it’s a home run!

    Plus, it’s got a little bit of a zing to it, so it’ll raise your temperature a bit. Remember, I like to sweat!

    It’ll remind you of that one game, bottom of the ninth, game tied, one out and you’re on third… CRACK! The ball is hit. You see the center fielder catching the ball… you tag up then take off towards home just as the centerfielder throws the ball to the catcher… you slide…

    SAFE.

    Your sweaty, dirty self and that sacrifice fly just lead the team to a win!

      I did not come here to tell you that lentil curry sounds good. In case you forgot, I do not enjoy such flavors. Rather I came here to tell you that while I was finishing up a sweltering run of my own in North Park today, a group of three male runners passed me. When they got about 20 yards ahead, I noticed one of them was wearing Vibrams! I wanted to shout how awesome he was but my legs wouldn’t take me any further any faster :( Naturally this made me think about you and I proceeded to brag about you and Ashley to my running partner for the next 5 minutes.

    5. What a nice lady to offer you some water that makes me smile :-) . That curry looks pretty awesome. A homerun no doubt! My favorite past time as a kid was girls soft ball, now as an adult pub patios, even if it’s just with an icey glass of water with lemon.
