Hollidaysburg Holiday

Glad you all liked my barefoot essentials post! As long as I have something to post, I’ll be posting one every weekend, so keep an eye out!

Back to the weekend… It was quite a weekend of food, and of course I have no objection. One nice thing about having both of our families in the same town is that there is no shortage of holiday meals—and in the summer, cookouts!

There is also no shortage of black dog hair, but no one was too happy about that.

Cook out #1

My dad manned the grill and gussied up some chicken and fine burgers for the fam. Mine were meatless, obviously.

Then my cousin and I combined our super powers to create this fabulous dish.

  • -Mama Pea’s Vegan Black Bean Burger
  • -Homemade Guacamole
  • -Jessica’s fresh salad (cucumbers, heirloom tomatoes, cherry tomatoes, red, yellow and orange peppers, sweet onion, red onion, radishes, garlic, avocado, cilantro, and fresh lime juice)

Ok, yes, I do realize that I didn’t create any of the food here, but the combination of these three things is my brain child–which quickly became my food baby.

We’re planning on opening a restaurant and serving this as our signature dish. Right now, it’s our only dish. But at least I’d be satisfied.

We finished off our 3rd of July celebration with a midnight Meadow’s hot fudge sundae (for only $1)! Yea, I stayed up until midnight for this bad boy! It’s a Hollidaysburg Holiday tradition! :)

I took the leftovers from cook out #1 to keep my vegetarian belly happy. I don’t expect people to cater to me and my dietary needs. I’d rather just bring my meal instead of having someone work extra to keep me fed. This way I know what I am eating and no one is being put out. It’s a win-win sit-u-a-shee-own. :D

All in all, a great trip back home! Family, food and fun…the trifecta! Plus, I love summer cookouts!!

What’s your favorite holiday meal?

I’m a huge fan of cookouts! Especially when there is sweet corn involved. There wasn’t at this one, but I promise that there will be in the future!

    oh yummmm. I love cookouts too! Summer time memories. And I would definitely be staying up late for that ice ream goodness.

    I didn’t know they did $1 sundae’s at the Meadows at midnight on the 4th!! What have I been missing out on!?!? Looks/sounds like you had a fun time at home! I would say that one of my favorite holiday meals is the fruit salad my mom and I make for Thanksgiving and Christmas. I like to make it other times too but the “real version” is pretty labor intensive. I make “fake versions” all the time though. For summer holidays I just love grilling all kinds of foods :)

    My favorite holiday meal is the egg bake that we always have for Christmas brunch. It is so good, and something I never make for myself.

    I loved reading this because I brought my own meal to the 4th of July BBQ I attended on Sunday. It’s a very common occurrence for me to bring my own food. I also brought lots of pita chips and hummus so I knew there would be an appetizer I liked…it turned out to be a crowd-pleaser as usual. For my meal, I brought a big salad of greens, lentils and red quinoa with bell pepper and avocado. I taught a few people there about delicious quinoa. :)

  7. Great photos and the topped black bean burger looks wonderful! Anything with beans and fresh fruit makes a great holiday meal depending on the holiday, I’m a huge fan of watermelon for the 4th.

  10. I love holiday food – like cheesy casseroles, stuffing and rolls. I am a carbaholic. What can I say? ;) This holiday season will be my first as a vegetarian so it will be interesting I am sure. :)

    Your veggie burger, guac and salad combo looks delicious. I would definitely eat at your restaurant even if that was the only item on the menu!

    With that dish, I’d be a loyal patrol of your restaurant. I love big family cookouts. The food is always great and you can’t beat a little extra family time.

  13. I love cookouts too during the summer, the different types of food is endless! My favorite right now is skewers, I love loading them will all different veggies.

  14. I wouldn’t mind the black dog hair if it meant I could run all day with those pretty doggies! I love bbq grilled veggies and watermelon and frozen custard!

    I think it’s so fun that both of your families are close by! The Bf and I do a lot with his family but because mine is farther away we only get to see them once in a while.
