Roll With It

This weekend went crazy fast! Things were popping up right and left and I had to just roll with it. That usually isn’t a problem for me. But for Dave, well, it takes two weeks for him to do anything spontaneous.
Friday night we decided to head to the drive-in with Shannon to see Dinner for Schmucks and Inception. It was a late night and I had my long run in the morning, but I decided to roll with it. I also used the opportunity to carbo-load on Goldfish! Healthy, I know…but you gotta roll with it.

Saturday began with my 8 miles. Funny how that is a “long” run now, when last time I was training, a long run was anything over 14 miles. Cuh-ray-zee!
After my run I went outlet shopping by my lonesome. I was supposed to go with a friend, but it didn’t work out…say it with me… “roll with it”. Actually I don’t mind shopping alone. I’m not a fan of shopping so the sooner I can get out is the better! I dropped a pretty penny in the GAP outlet, and I want to go back and buy more. Uh oh, Dave, hide the credit card!
Saturday night was another spontaneous adventure. Dave won a raffle for Steelers’ tickets! They were club seats, so when the monsoon (exaggerating) pummeled through Pittsburgh, we just stepped inside and enjoyed food and air condition. What can I say, we roll with it!
Sunday brought with itself some unexpected matters that I have been working on since lunchtime yesterday. Friends, I hate to say it, but I’m sick of staring at this computer screen. Thankfully, I finished everything I needed to…mainly because Dave was kind enough to decide dinner.
Notice I said “decide” dinner. I still had to make it (he helped, though..and I needed the break from typing).
I’m terrible with recipes, so I don’t have any kind of exact measurements for you, but this recipe is very forgiving and you can add your own variety to it. You know, just roll with it!
Whole Wheat Tomato Rolls
You’ll need:
- Whole Wheat Pizza Dough(I used one from Jessica)
- Diced Tomatoes
- Shredded Mozzarella Cheese
- Olive Oil
- Minced Garlic
- Oregano, basil, salt, pepper
Preheat oven to 375.
Mix some olive oil with garlic, oregano, basil, salt, and pepper (no measurements—just have fun with it).
Form small balls of dough, about the size of a large marble.
Flatten the dough into a rectangular shape (this one is mine, Dave’s of course had to be PERFECT).
Brush the olive oil/spices on the dough.
Add tomatoes and cheese.
Roll the dough up however you can get it around the the tomatoes and cheese.
Lightly brush olive oil on the top.
Place on greased cookie sheet. Cook for about 10 minutes. Serve with marinara sauce!
The first time we made these they were more like rolls, but this time they were more like tomato pouches!
Oh well, you just got to roll with it!
Are you spontaneous or do you, like Dave, need two weeks to be spontaneous?
Dave’s the planner and I’m spontaneous…both to the extreme. So we balance each other out nicely!

PPS I’m not only one who has been busy…my nephew Levi has been busy being CUTE! That’s right, ANOTHER photo contest. He came in 13th (out of 1,000) in the last one even though he deserved first place. My brother and his wife won’t give up until he wins (so they can pay to fix the car)!!!

I absoloutely LOVE those whole wheat tomato rolls. I may steal that idea so don’t be surprised if you find me eating it on my blog at some point. But don’t worry, I’ll give you credit.
I can be very spontaneous, but my husband on the other hand . . . he is like Dave. Sometimes it can take him about two weeks (or even longer) to be spontaneous. I guess opposites really do attract.

Opposites do attract..and I am glad for that. I definitely need someone to keep me on track!
So, I’m running 12 miles this weekend but I still think of 6 miles as a long run. Haha, it’s all about perspective I guess.

I have a hard time “rolling” with it – but I am much better then I used to be.
I like to plan meals and the weekend – but sometimes it is fun to have plans change.
I wish I was better at planning meals. I’ve tried, but I always end up changing those plans, anyway! I guess some people just arent meant to be planners!
Those look really good! I like to have at least an idea of what might happen. But, if things change I’m pretty flexible. To “roll with it” is a good motto that everybody (myself included) should adopt and learn.

I am so jealous you got to go to the game! I am somewhere in between you and Dave. I do like to make spontaneous decisions – and when I do they are really good (buying my Mac, trading in my lease early) but I am still a planner at heart! I’m glad it doesn’t take me two weeks, though – sheesh!

Even though I’m not a planner, I really appreciate it in other people. I definitely need LOTS of planners in my life.
I am definitely a planner. Things just always seem to go a little smoother with a little advanced prep time.
My husband is very spontaneous, so I’m slowly learning to appreciate the art of little to no planning.
AWww it sounds like you two have a good balance! I know I’m good for Dave and he’s good for me. We have to meet in the middle! Sometimes it’s easy, sometimes it’s not!
I can go either way depending on my mood. Either I’m really laid back or feeling super “planny.” I try to roll with it though.

I love to plan too, but sometimes it’s more fun to just roll with it. I’m great at rolling with it at the beach, but in day to day life I’m pretty Type A
Ahh yes, I love rollin’ with it on the beach. Dave is ALWAYS type A, which is funny to watch on vacation. I almost feel bad he can’t sit down and enjoy that fact that there are no plans!! Poor guy!
I just wanted to say HI!!!! I stumbled across your blog today…LOVE IT!! I’m from Wheeling, so not so far from you!!! I was actually just at the outlets (were you talking about the Tanger outlets??) last week! My weaknesses are Banana Republic and Nike (LOVE their running shorts!). I also wanted say that I’m SO JEALOUS that you got to go to the Steelers game! One of my coworkers went, and she got soaked!! But had so much fun! Anywhoo, I just wanted to say hi and introduce myself!!

I WAS at the Tanger outlets!! It’s funny because I’m not a huge fan of Banana, but today I wore an outfit entirely of banana clothes (I think I have like 4 things from there), and I carried my lunch in my Banana bag from my shopping trip. I promise it was an accident!
It was a fun game. I’m really glad I had the chance to go inside during the rain delay. If I couldn’t I probably would have wanted to leave. I’m glad we stayed!
