This past week I made Morgan’s apple butter. And the thought of her apple butter/apple/brie panini made me drool, so that’s what I made for Dave and me tonight. Plus some bacon on Dave’s.

But you see, Dave is a meat and potatoes kind of guy and the thought of brie cheese for dinner left him nervous all day long.

“What?” he asks, “You mean American cheese isn’t the only kind of cheese?”

No, dear, it’s not. In fact it made me wonder if American cheese really is cheese at all. I thought it was rubber with some food coloring. Perhaps I’m wrong. But I doubt you could do much to dissuade me from thinking that it belongs in the same category as Velveeta and Cheez Whiz.

But I did some research. And now I have a trivia question for you:

American cheese began as a real cheese, but now it’s highly processed. However, it has commonly been made by combining what two kinds of cheese?
