Pumpkin Chocolate Chip Cookies

In true Abby Normally fashion I wrote a “Don’t Forget to Vote” blog and forgot to post it this morning. Oh well, hope you voted!

It was late October of my Junior year of college. I was sharing a dumpy apartment in South Oakland with some of my best friends and we did our best to make it as much as home as possible. Although, I certainly wasn’t thrilled about painting the living room and raging burnt orange color..but that’s another story…
The weather was starting to get cold and we agreed that it was finally time to turn on our heat. Not only for our own comfort, but because we were hosting a Halloween party that weekend. The night before, well after I went to bed, my roommate Amanda baked pumpkin chocolate chip cookies in anticipation of our guests. If my memory serves me correctly, it was early Friday morning and my alarm had not gone off reminding me about my 9 am Latin class. I was so comfortable laying there…warm from the combination of my jersey knit sheets and the furnace, I couldn’t help but smile as I smelled the wonderful pumpkin and autumn spices wafting from the kitchen. It was, without a doubt, the perfect fall morning.
It was also the day that I fell in love with all things pumpkin. I didn’t need to have a bite of the cookie to know that it would be amazing. And every fall since then, I have made it a point to make pumpkin chocolate chip cookies in hopes that I wake up the next morning greeted by the same warmth and the same smells.
No such luck. My husband not only snores in the morning, but he also sets the thermostat at 57 degrees each night before bed. However, he does ask for these cookies by name.
Pumpkin Chocolate Chip Cookies
- 1 cup canned pumpkin
- 1 cup sugar
- 1/2 applesauce
- 1 teaspoon almond milk
- 1 tablespoon vanilla extract
- 1faux-flax egg (1 tbsp ground flax, 3 tbsp water, mixed) or 1 real egg works too.
- 2 cups whole wheat flour
- 2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups semisweet chocolate chips (I added some white chocolate chips, too)
Mix together flour, baking soda, pumpkin pie spice, and salt. Then add the remaining ingredients to the flour mixture and blend well.
Place spoonfuls of dough on slightly greased tray about 1 inch apart.
Bake for approximately 10 minutes.
I probably won’t ever know that peace again, but at least I still have pumpkin chocolate chip cookies to comfort me. If only they could keep me warm too.

9 am latin class….oh those were the days
I miss it! I had coffee with Rhett last year, but I haven’t talked to him for a loooong time. That was a fun class!

and yep, Abby and I made it through two semesters of latin together her junior year and my freshman one

I have a half empty can of pumpkin in my fridge and now I know exactly what I am doing with it! Your cookies look so good!! I love pumpkin! My husband loves sleeping in a cold house too, I feel your pain!
Yay! Hope you like them! And sometimes I try to sneak the temperature back up, but he always catches me! I call him the heat Nazi!
1. I loved the burnt orange! I believe I’m the one that actually picked it out. I still have clothes that have the orange paint splatter on them!
2. Was I the one that made the cookies or Edris? I can’t remember who made them but I remember them being about the best cookies I’ve ever had in my life!

57 degrees to this girl is downright freezing weather now – so sad – but I definitely sleep better when I’m cold. Maybe that’s Dave’s theory behind the thermostat? Does your new place have hardwood floors? If so, get ready for drafts!

What a perfect day (yesterday) for a post about pumpkin. I happen to have an open can and couldn’t think of what to do with it! I have two questions about your recipe though. First, you mean 2 cups of flour, right? Just in case you have any beginner-bakers reading, I thought you might want to know you forgot the measurement. I mean…2 SOMETHINGS of flour could be a dangerous addition to your delicious recipe…2 bags of flour could make sense to some people, hehe
jk. Secondly, have you ever used soy milk for this recipe or any others? I’m a fan of it more than almond milk and wondered how the two compare when baking.
Oh, also wanted to say that I’m with Dave about the heat, or lack of. I enjoy sleeping in the cold…this morning when I woke up I FREAKED out because I thought something was on fire. It turns out that Brent just turned the heat on last night and I didn’t realize what I was smelling was the “first time of the season” radiator smell

Oops! Thanks for catching that! I fixed it, and yes it’s 2 cups. You could definitely use soy milk, I just had almond milk on hand. I try to watch my soy intake because the (natural) hormones in it can be bad if you have too much.
I don’t mind sleeping in the cold, but it is getting out of bed that is painful!

Umm, you know I’m a pumpkin lover!!! My favorite use of pumpkin would have to be the pumpkin smoothies!!! I just made a pumpkin black bean burrito that wasn’t too bad either!! I like the sound of painting burnt orange…more of an accent color though. Could be really fun!
