Sweet Potato Hash Pizza

Hello friends! I hope you had as lovely of a day as I did! :)

When I got to work, I discovered that the office was closed because they are replacing our furnace and I got the day off! Plus I only need to work a couple of hours tomorrow.

Glorious!

Shannon and I decided to go for coffee, and we spent the next two hours chatting at Starbucks. It was wonderful!

Seeing that I had the day to myself, I figured I should wear the housewife hat and get some cleaning done and prepare Dave a dinner.

And let me tell you, friends, this dinner was delicious.

Unfortunately I have no pictures to show for it because I devoured it too quickly. And even if I took a minute to snap a picture or two, I wouldn’t be able to because my camera batteries are dead.

Whoopsies!

But if you don’t mind, I’ll still give you the recipe (there aren’t exact measurements because that’s how I roll):

Sweet Potato Hash Pizza:

Pumpkin pizza dough
Barbeque sauce
1 large sweet potato
1 can black beans
1 cup diced pineapple (approx.)
Cheddar cheese
Paprika
Cinnamon
Salt

First of all, I started with Ashley’s Pumpkin garlic knot dough, but rolled it out into a circle and baked it. (I think it was 425 for 10-12 minutes, but I can’t remember. I’m like that.)

Whiel that was baking I sautéed the sweet potato in olive oil with paprika, cinnamon and salt.

Once they were tender, I added the black beans and pineapple and cooked them until they were warm. The black beans get mushy and that is ok. Season to taste.

Once the pizza crust was done, I topped it with barbeque sauce, threw on the sweet potato hash, and topped with cheddar cheese.

Baked for another 10 minutes and voila! Sweet potato hash pizza.

It was so good and so filling that I ate it until I was unbelievably stuffed.

But it was so worth it.

Next time I make it, and trust me that there will be a next time, I will take pictures!

For now, Indiana Jones and the Raiders of the Lost Ark is on TV and I really would hate to miss it! I love those movies…and Harrison Ford!

A Kind Reminder

Have you ever noticed how quick we all are to speak up to offer criticism and to express our disapproval? I know that my tendency is to judge people based on my perceptions and to find justifications for my own actions.

And then I came across this quote:

Be kind, for everyone you meet is fighting a hard battle.
~Plato

And it makes me think twice before I am too quick to pass my own limited judgment on the people I encounter.

It’s also another reminder to do good.
